Diabetes. It’s the number one cause of blindness, amputations, kidney failure, neuropathies and almost 15 million Americans have it. That’s one third! That number is staggering, especially since of that number, 14 million could be prevented or have the disease reversed.
You read that right, reversed! To sum up what is a very complicated disease in a nutshell: if someone carries too much fat on their body, it’s also deep, deep inside their cells. This fat inside the cells gums up the works (which is the scientific terminology) and makes it so insulin can’t do it’s job. Lose the fat, the cells shake loose their fat too and presto chango, insulin is again allowed to do it’s job. Keep the fat off, insulin keeps on doing what it’s supposed to. Diabetes is a true food borne illness.
The goal of the Food for Life: Diabetes Initiative program is to empower people who have diabetes and those concerned about developing diabetes, along with their friends and family members with new information and skills. Each class offers a cooking demonstration, and provides samples of delicious, health-promoting dishes, along with a take-home packet of easy and affordable recipes. Many people following a plant-based diet have prevented or seen their diabetes become nonexistent.
